Trying Thai

I’ve always loved hot & spicy food which is why I enjoy eating (and now trying to cook) Thai cuisine. It was my first time to try eating at SOM’s. We ordered Pad Thai topped with Shrimps and a bowl of Curried Tofu.

I got interested to try cooking curried tofu. It’s easy to cook and the ingredients are pretty easy to find. It’s good to cook something than the usual dishes at home. You could also do this when you’re craving for SOMs but you’re stuck at home to finish some chores.

Ingredients:

6 blocks of tofu, diced.
5 cloves of garlic, minced
1 onion, chopped
2-3 pieces of sliced green and red bell pepper
2-3 pieces of sliced chili (green)
1-2 pieces eggplant, sliced
1 cup of coconut milk
2-3 tablespoons of fish sauce
1 tbsp. of curry powder
1 teaspoon of turmeric powder
1 teaspoon of chili powder
½ cup of tomato sauce

[Note however that I really didn’t use measure cups, merely approximation.]

Process:

1.Sauté garlic, onion, and green and red bell pepper.
2.Add the sliced chili.
3.Add the sliced eggplant.
4.Add the fish sauce.
5.When the eggplant is half-cooked, add the coconut milk.
6.Bring to a boil.
7.Add the curry powder, turmeric powder, and chili powder.
8.Simmer for around 2 minutes.
9.Add the diced tofu.
10.Simmer for around 2 minutes.
11.Add the tomato sauce.
12.Simmer for around 2minutes.
